A Modern Classic on Ancient Slopes
Perched above the slopes of Popice with one of Moravia’s most iconic views of the Pálava hills, Sonberk is a winery born from both deep tradition and confident modernity. The vineyard site has seen vines for centuries, once supplying royal courts, and now produces wines that reflect both history and precision viticulture.
Founded in the early 2000s, Sonberk quickly became a beacon of modern Czech wine culture — combining meticulous vineyard work on roughly 40 – 45 hectares of loess soil with state-of-the-art winemaking under one roof, designed by architect Josef Pleskot.
A Terroir-First Philosophy
Sonberk’s approach balances respect for tradition with contemporary precision. Vineyard management prioritizes hand harvest and sustainable practices, optimizing ripeness and site expression across varieties like Riesling, Pálava, Traminer and Sauvignon.
In the cellar, wines are shaped to emphasize purity and clarity rather than stylistic manipulation. The goal is to let soil, slope and sun speak through the varietal character — wines that pair seamlessly with food and invite conversation.
Terroir at the Core
Sonberk’s vineyards sit on south and south-west facing loess slopes with optimal sun exposure and natural drainage, fostering even ripening and vibrant acidity.
Loess soil: Fruit, intensity, juiciness, and minerality
Claystone (West Hustopece): herbal, dense, ageworthy
Limestone (Pavlov): shart, mineral, saline, linear
Together, they create the duality that defines THAYA’s style: wild mineral tension and sunlit fruit richness.
This combination gives Sonberk wines both immediacy and structure — approachable yet layered, expressive of Moravian Pálava’s climatic energy.
Clarity. Terroir. Balance. Drinkability. Craft.
