The Reluctant Hair Who Become Master of Precision
Born into a Moravian winemaking family, he saw vineyards as the end of childhood summers. But everything changed after internships in Spain, where he discovered that greatness in wine doesn’t come from doing everything - it comes from doing one thing exceptionally well.
He returned home determined to specialize. In 2011, he bottled his first micro-batch. Today, over 80 % of his production is Sauvignon Blanc - and it shows.
A Precision-Driven Philosophy
Roman farms organically and vinifies reductively - not to manipulate, but to protect what nature gives.
His wines are known for their clarity, tension and long-term aging potential, with minimal intervention from vine to bottle. Everything he does is in service of origin.
He doesn’t chase trends. He doesn’t overwork the wine. He lets the site and structure speak.
Terroir at the Core
Sand & sandstone (East Hustopece): juicy, fruit-forward, aromatic
Claystone (West Hustopece): herbal, dense, ageworthy
Limestone (Pavlov): shart, mineral, saline, linear
Precision. Passion. Intuition. Respect. Creativity.
